favorite holiday choc-chip cookies!

Happy family time...
On the east coast of South Africa lies a small town called
'Leisure Bay'.
In these crazy two weeks we were all over each other!

From top to bottom: Me, Barend (second son), Henk (Hubby), Nina (youngest), Casper (third son) and Henri (our eldest son)

Our fearless 'Team Paraguay' wrecked havoc at the local
beach volleyball tournament! 

(Our team's name was "PA--RA--GUAY
because when this cry is wholeheartedly shouted, 
it echo's for m-i-l-e-s!

With incomparable support we marched on to seize the victory
and take home the first prize - ice-creams! 
Combine the ice-cream with choc-chip cookies on the beach!!                    



Choc Chip Cookies

No matter what the production rate or -capasity, 
these cookies come out with a guarantee 
of being devoured within minutes of completion!

(Recipe may be halved as this makes heaps!)


5 cups (1250 ml) blended oatmeal     Measure oatmeal and blend in a blender to a fine powder.

2 cups (500 ml/500g) butter                Cream the butter and both sugars. 
2 cups (500 ml) brown sugar
2 cups (500 ml) white sugar

4 eggs                                                    Add the eggs and vanilla. 
2 tsp. (10 ml) vanilla

4 cups (1000 ml) flour                           Mix together with flour, oatmeal, salt, baking powder and 
1 tsp. (5 ml) salt                                     Bicarbonate of Soda
2 tsp. (10 ml) baking powder
2 tsp. (10 ml) Bicarbonate of Soda



680 g chocolate chips                           Add chocolate chips, grated chocolate and nuts.

500 g grated (Cadbury) chocolate
3 cups (375 ml) chopped nuts (optional)

Roll into balls and place 2 inches apart on a cookie sheet or baking tray.

Bake for 10 minutes at 180 °C.

The above quantities make 112 cookies.

They're as sweet as life itself! 
Go ahead and indulge your senses!

Hi Ida, Love that top picture of your wonderful family... You and your hubby have 4 beautiful children...

In the second photo, I laughed at the guy holding his tongue out... One of my sons used to do that.... FUNNY.

I love the fact that you use oatmeal for these cookies! I really must try them! Humm...maybe this evening... They look so yummy!
I was wondering if you could help me out with something... Do you know of any churches in Africa named in St. Nicholas's honor? I really would like to include a few from your area of the world in my "St. Nicholas churches around the world" section and if you know of one...that would be great!
