a mother's day pudding

Everybody needs a recipe of a pudding that really goes quickly.
It's a pudding for unexpected guests,
a pudding for the swe-ee-e-t toothed,
a pudding when you don't want to be in font of the stove for a long time,
a pudding to impress everyone when camping, when you 'braai' (BBQ), whenever...!
This is going to be my pudding on Sunday.


Quick brown pudding:


SAUCE:
1 liter water
375 ml sugar
5 ml cinnamon (or ginger)
Place all the ingredients for the sauce into a large saucepan (with a lid) and bring to boil. 
In the mean time, prepare the dough. 


DOUGH:
125 ml apricot jam
125 g margarine or butter
10 ml bicarbonate of soda
375 ml flour
5 ml salt

  1. Melt the margarine and jam in the microwave (do not boil - or just melt the butter and stir in the jam - the jam will melt from the heat of the margarine).
  2. Add the bicarbonate of soda and mix well.
  3. Add the flour and salt and mix into a dough.
  4. Place spoonfuls of the dough into the boiling sauce. **
  5. Cover with the lid and cook for 10 - 12 minutes.
  6. Serve with vanilla ice-cream and/or custard. 
**Tips: 1. To get it easily done - first dip your spoon  into the hot sauce.
              (a ice-cream scoop works well)
          2.  When the sauce is boiling, it must be 'slow' boiling, not too much bubbling.

Photo Friday - 29 April 2011

It was a pleasant, relaxing week,
 with 2 public holidays days AND 2 long weekends back to back…   
Winter is here, accompanied by the freezing night temperatures!


And as the temperatures is decreasing, the appetites are increasing accordingly!
Nina spoiled us with delicious scones, while Casper had fun with flipping pancakes! :)

R&R week...

We had to stop the car to take this picture (below).
Passengers are allowed to look at the sunset
s-h-i-n-i-n-g it's long evening rays on the grass fields.

The driver must obviously try to find a way to pass the  "few" potholes around Marquard. 
Where to drive? ... Left side, right side or in the middle? 
Yah, we all drive 'wild' to prevent a flat wheel!

Photo Friday - 22 April 2011

I've got the idea of a PHOTO FRIDAY
from my blog friend, 
Betty.
That way you can keep track of all your activities throughout the year.


We had lovely rains on Monday - 47mm in half an hour's time!    
Marquard never ever had as much rain as this past year.


My dogs love it to go running in open spaces...
...for now, WET open spaces.  
The golf course is near our house, so I took them there to get rid of all their energy.
(Note: I walk, they run!)


Tuesday evening: 
Bible study at our house.
We enjoyed chatting and drinking tea afterwards.




Me and my friend, Paula,
attended a food demonstration on Wednesday.
My favourite was the
créme brûlée. It's a WINNER!
(…also a calorie winner!!!)


After the demo I strolled through the beautiful Waterfront Mall.




Casper's classes at the University was finished for the day.
He quickly helped me to buy groceries.
There will be many hungry bellies at home this weekend!! 




It was House- and Gardenclub meeting on Thursday.
Anisa of Succulent Decor in Pretoria talked with us.

Dit het heerlik gereën Maandag. 
47mm in 'n half uur!!
Marquard het nog nooit ooit soveel reën gehad soos die afgelope jaar nie.
My honde 'love' dit om te gaan draf.

Dinsdag-aand: 
Bybelstudie by ons huis.
Ons drink lekker tee en eet vetkoek met maalvleis na die tyd.

Ek en my vriendin, Paula,
was Woensdag in Bloemfontein by 'n Kos-demonstrasie.
My gusteling was die créme brûlée. Dis 'n WENNER!

Daarna het ek 'n bietjie by die mall rondge'stroll'...


Casper het my gou gehelp om kruideniers te koop.
Daar gaan baie honger magies die naweek by die huis wees!



Dit was Huis- en Tuinbouvergadering Donderdag.
Anisa van Succulent Decor in Pretoria het met ons kom praat.



Ek is SKATRYK!!!!

Ons Vrydag-oggend het begin met 'n kerkdiens 8h00.

favorite holiday choc-chip cookies!

Happy family time...
On the east coast of South Africa lies a small town called
'Leisure Bay'.
In these crazy two weeks we were all over each other!

From top to bottom: Me, Barend (second son), Henk (Hubby), Nina (youngest), Casper (third son) and Henri (our eldest son)

Our fearless 'Team Paraguay' wrecked havoc at the local
beach volleyball tournament! 

(Our team's name was "PA--RA--GUAY
because when this cry is wholeheartedly shouted, 
it echo's for m-i-l-e-s!

With incomparable support we marched on to seize the victory
and take home the first prize - ice-creams! 
Combine the ice-cream with choc-chip cookies on the beach!!                    



Choc Chip Cookies

No matter what the production rate or -capasity, 
these cookies come out with a guarantee 
of being devoured within minutes of completion!

(Recipe may be halved as this makes heaps!)


5 cups (1250 ml) blended oatmeal     Measure oatmeal and blend in a blender to a fine powder.

2 cups (500 ml/500g) butter                Cream the butter and both sugars. 
2 cups (500 ml) brown sugar
2 cups (500 ml) white sugar

4 eggs                                                    Add the eggs and vanilla. 
2 tsp. (10 ml) vanilla

4 cups (1000 ml) flour                           Mix together with flour, oatmeal, salt, baking powder and 
1 tsp. (5 ml) salt                                     Bicarbonate of Soda
2 tsp. (10 ml) baking powder
2 tsp. (10 ml) Bicarbonate of Soda



680 g chocolate chips                           Add chocolate chips, grated chocolate and nuts.

500 g grated (Cadbury) chocolate
3 cups (375 ml) chopped nuts (optional)

Roll into balls and place 2 inches apart on a cookie sheet or baking tray.

Bake for 10 minutes at 180 °C.

The above quantities make 112 cookies.

They're as sweet as life itself! 
Go ahead and indulge your senses!
